Engraving depicting the interior of the Longford Cheese Factory, the first to be built in England. The making-room: when correct acidity reached, most of whey was drawn off by siphon. The remaining curd was allowed to run down the chute into a dry-vat, which contained cloth used to strain the curd from the whey. Salt was then added to the curd before it was put in presses. Dated 19th Century
