The outbreak of the Cattle Plague in 1865 amongst cows kept in city cellars and backyards, and the subsequent introduction of veterinary inspection created an opportunity for railways to carry fresh milk from the countryside into cities. By 1889 54 million gallons a year were being brought into London by rail. Dated 19th century
